Sunday Roast Leftover Soup

This month, everyone in the office has been trying to think of out of the box ideas on how to recycle different items ♻️


Some ideas we came up with were re-purposing old t-shirts as cleaning cloths; using empty laundry bottles as watering cans; using old cardboard tubes to organise cables; turning an old milk bottle into a herb container; and filling empty glass bottles with fairy lights ✨


Now there are millions of different ideas out there, (just a quick search on the internet proves that!) but Liam then came up with the idea of what about different ways we could reuse leftover food.. 


So with that in mind, say hello to our Sunday Roast Leftover Soup 🍲


This soup is the perfect way to reuse all the leftover veg and chicken from a Sunday Roast. Why not give it a try this week and make your roast last longer than just a Sunday 😊

Sunday Roast Leftover Soup


1 Onion

3 cloves of Garlic

1 tbsp Olive Oil

1 Potato

1 litre of Chicken Stock

Leftover roast Chicken

600g leftover cooked Vegetables


  • Dice the onion and finely chop the garlic; fry both in oil for 5 minutes.
  • Add a diced potato to the pan and cook for a further 2 minutes.
  • Pour in a litre of chicken stock and leave to cook until the potato is soft.
  • While the potato is softening, take the leftover roast chicken and shred the meat.
  • Once the potato is soft, add around 600g of leftover cooked vegetables. Leave to simmer for a couple of minutes.
  • Add the contents of the pan to a blender and blend until smooth.
  • Season the soup to your preferred taste and finally stir in the shredded roast chicken.
