Rich Vegan Brownies
1/4 cup pureed or well-mashed avocado
1/4 cup avocado oil or extra-virgin olive oil
1 cup white Plain Flour (White or Wholemeal)
1/2 cup unsweetened cocoa powder
3/4 cup Sweet Freedom Fruit Syrup
1 teaspoon baking soda
1/2 teaspoon salt
3/4 cup water (or use 1/2 cup brewed coffee + 1/4 cup water)
1 1/2 cups Dairy Free chocolate chips
¼ cup of Sweet Freedom Choc Shake Caramel
Preheat oven to 180 degrees and grease an 8-inch square pan with cooking spray.
Mix together the avocado and oil until smooth in a large mixing bowl then add in the flour, cocoa powder, Sweet Freedom Fruit Syrup, baking soda, salt, water (or coffee + water) and Sweet Freedom Choc Shake Caramel.
Mix this until it is a smooth batter and then fold in 1 cup of the chocolate chips.
Pour the mixture into the greased square baking pan and spread the batter evenly throughout. Sprinkle with an additional 1/2 cup of chocolate chips on top.
Bake for 15-20 minutes, or until a toothpick inserted into the centre comes out mostly clean (there may be some delicious melted chocolate in there!)
Remove from the oven and leave to cool for 20-30 minutes before cutting and serving.
Dark Chocolate Coconut Macaroons
3 cups Desiccated Coconut
1 cup canned coconut milk
1/3 cup Sweet Freedom Choc Shot Coconut
1/3 cup Flaked or chopped almonds
1/4 cup flour of choice such as Almond or Spelt
1 1/2 teaspoons vanilla extract
Pinch of salt
200g Dark, dairy-free chocolate
Preheat the oven to 180 degrees and line baking trays with grease proof paper.
In a large mixing bowl, mix the desiccated coconut, milk, Sweet Freedom Choc Shot, flaked almonds, flour, a pinch of salt and vanilla extract.
Once thoroughly combined, use 2 tablespoons to place heaped mounds on the baking trays, packing the mixture together tightly so they hold their own shape.
Bake for 20-25 minutes until golden, rotating the tray halfway through.
Once they are cooked, remove from the oven and leave to cool.
Break up the chocolate and melt in the microwave in 10-second intervals, taking care not to burn the chocolate.
Drizzle the melted chocolate over the macaroons and leave until set.
Remove from the tray and serve.
